Hi friends,
Hope you are all  doing well. Today I wish to share a  little information about our Indian Bhindi or Okra or  ladies finger as they call it.

Did you know?

1. Okra  is a flowering plant in the mallow family.  What we eat is the pod.
2. Okra or lady's finger as they call it originated from Africa.
3. Okra comes from the same family  as cotton
4. Okra flowers are beautiful  to look at.
5. Okra boosts immune system, aids in digestion.
6. The seeds from once can be brewed as a substitute for coffee.

Now enough of information,  let's get to this easy try allo- Bhindi you can stir up in 15 minutes in the morning for your kids Tiffin or husbands dabba.

Ingredients

250 gms Bhindi
2 small potatoes
1/2 tsp red chilli powder
1/2 tsp amchoor powder
1 tsp cumin seeds
2 tpsp Oil
1/4 tsp turmeric
Juice of half lime
Salt

Method

1. Wash, dry and chop ladies finger into tiny size pieces. Keep aside.

2. Chop and cube the potatoes.

3. Heat kadai with  oil and splutter the cumim seeds.

4. Add cubed potatoes and sprinkle some salt for it. Cook for 3-4 minutes.

5. Add the haldi, chilli powder and stir for a minute.

6.  Now add the bhindi to the kadai and allow it to simmer, stirring occasionally.
Note: Bhindi releases moisture when cooked covered and will get sticky. But after sometimes it will turn fine.

7. Once the bhindi is soft in texture, add lime, aamchoor powder and salt to taste.

8. Cook on low flame till bhindi is done. The bhindi will change its color to brown.

9. Turn the gas off to allow the cooked dish  to rest in the pan while covering it. This will allow the bhindi to retain the moisture and stay crispy.
10 Serve this Aloo Bhindi Ki Sabzi along with ghee walli roti, curd and mango pickle and see your family lick their fingers clean.

If you cook Bhindi in another way do let me know in the comments.
