Pepper chicken with mushroom sauce

Hello Everyone,

I am Farzeen Irani, Sweetannu's sister. Today I will share a simple recipe of mine that is ready to be served on the table in  just 15 minutes. This recipe is totally my own invention. You can check the step by step recipe in the images I have shared below.

Pepper chicken with mushroom sauce

Ingredients

For stir fry chicken breast
Boneless chicken breast,
Salt n pepper
Barbeque sauce (optional)
Garlic paste
Olive oil

For mushroom sauce
Few freshly sliced mushrooms
1 tsp Basil
1 tsp parsley
1/2 cup grated cheese
1 tbsp fresh cream
1 tsp Pepper powder
Avoid salt since you are adding cheese

Step by step Method

1. Slice the chicken breast in half and marinate with salt, pepper, garlic and olive oil. Barbeque sauce is optional. Leave for 10-15 minutes. Pan fry on both sides for 5 minutes till done. Chicken breast doesn't take a long time to cook. If you over cook it, it gets chewy and is not enjoyable.

2. Chop the mushrooms, basil, parsley and grate the cheese. It is always good to prep before cooking as it saves time and you enjoy cooking when every thing is ready.

3. In a sauce pan add the  fresh cream and bring to boil on a slow flame. Now add the mushrooms, parsley, basil cheese and mushrooms. Season with pepper. Cook on a slow flame till you get a thick sauce and mushrooms are mushy.

4. Once the sauce is done, arrange the chicken fillet and serve mushrooms on the side. A slice of garlic bread and wine would be so fine. Dine in style because its saturday night.

Bon appétit Everyone

Chicken Shezwan Rice

Hello Friends,

So I am back with another simple recipe. This time I am making a dish with left over boiled rice. So let’s add those Indian spicy sauces and stir up some Shezwan fried rice. I know its not the right season to have some spicy stuff. But you can always cool down with some smoothies and coolers. It’s a small hint to whats coming next on the blog.

Chicken fried rice

So this rice I made is an Indian fusion of popular chinese fried rice recipe which is flavored with schezwan sauceWe see a lot of dish on street carts as it’s a popular street food with office goers and college students. It is also a good option to order during main course in many fine dine restaurants

Ingredients

  1. ·         2 cups Basmati rice
  2. ·         250 gms chicken
  3. ·         2 tbsp oil
  4. ·         1 tbsp garlic finely chopped
  5. ·         I bundle of spring onions
  6. ·         ½ cup carrot thinly sliced
  7. ·         Salt to taste
  8. ·         2 tbsp schezwan sauce
  9. ·         1 tbsp soy sauce

Method

1.      Here it is very important to prep before the actual making of the dish. So you can finely chop up the vegetables and keep them ready.
2.      Boil the chicken with salt, shred and keep aside.
3.      In a large wok/kadai, heat oil and saute garlic on high flame. Add the chopped onion bulbs till they get sweaty.
4.      Now add the finely chopped carrot and cabbage and stir this for a minute.
5.      Chicken can be added at this stage. Keep some chicken aside for garnish
6.      In the wok, add schezwan sauce, soy sauce, and salt.
7.      Add the cooked rice and mix with a heavy hand so the rice gets coated with the masala.
8.      Gently mix in the greens of the spring onions.
9.      Garnish with some boiled chicken and greens.

Make a simple soup to serve along
Enjoy it piping hot at family meal time. Makes a great quick morning dabba too.

Shahi Rice Phirni

Hi Friends,

When it comes to choosing desserts of the dessert counter, no one in my family is a big fan of indian desserts, they rather pick up a tiramisu, mousse or brownie with ice cream. However it's me who ends up tasting the malpuas, besan laddoos and halwas.  This week I tried to make an easy Indian sweet for my family. Nothing more easier than Phirni. And guess what!! They actually relished it.

Mouth watering Shahi Phirni

  • 2 tbsp chopped Corriander leaves

For the Dough:
  •  1 cup Wheat Flour
  •  2 tsp Oil
  • Salt to taste

Method

 1. Knead the dough using the flour, oil, salt and warm water. The dough should be soft. Divide dough into eight equal parts. Roll lightly with your palm to form spherical shape and keep aside.

2. For the filling, heat oil in a kadai. Add ginger garlic paste, chopped green chilies and chicken

Repeat the process with the remaining dough and filling.
9. Once cooked on both sides, cut it into wedges and serve hot- plain or with tomato sauce, chutney or curd.  Repeat the process with the remaining dough and filling.
