Winter Special Sesame and Peanut laddoo

 The yummy little balls of crushed peanuts and Jaggery, infused with the richness of Ghee and the heavenly taste of spiced ginger. 

Just pop one in your mouth when you’re feeling the need for some warmth and sugar, and smile as you go about savoring this delicious Winter Low Cal Laddoo.

Ingredients 

•1 cup  crushed Peanut

•1 cup Sesame Seeds

•1 cup Jaggery 

•1 tbsp Ghee

•1 tsp Ginger Powder 


Instructions


1. First roast the crushed peanuts  in a pan for few minutes.  Make sure that it's on low heat, then set aside and let it cool.


2. In the same pan add the sesame seeds and roast until they start to pop. 


3. After it cools Down, powder the sesame seeds coarsely and transfer to the mixing bowl.


4. Coarsely crush the peanuts too and add this to the sesame seed mixture.  


5. Now add ginger powder,  jaggery and ghee. 


6. Mix well and now shape into laddoos. 


7. The laddoos can be stored in an air tight jar upto 15 days.  


Note


You can also add black sesame seeds to this laddoo of you wish. 

I have used less ghee in this recipe. If needed add according to your requirements it gets easier to bind together.

 Healthy Fruity Muesli Dessert Shots

 

Nothing beats the fact that you can indulge to satisfy your sweet tooth yet get low on calorie intake. And in this context I end up  enjoying my  experimentation  in the kitchen with healthy wholesome ingredients. When Yogabar sent me their new range of healthy breakfast Muesli and Almond Nut butters this is what I created. You can check out the range on their website here.
This layered healthy Muesli fruity shots is a fun yet low calorie dessert with hung curd. I used the Yogabar fruit, nuts and seeds with whole wheat muesli in the recipe. This Muesli is an indulgent mix of dried fruits, nuts, seeds and whole grains. Added fresh fruit and Yogabar Dark Chocolate Almond Butter .  Added beetroot to hung curd that added a colorful nutritious twist to the entire recipe.  With different layers of yogurt, fruits and muesli, it looked so vibrant and beautiful.



This recipe makes 5 tasty little slimming friendly dessert shots. I used cutting chai glasses here; you can use whatever you have in your kitchen.

So without further ado lets get straight into the recipe.



 

Ingredients
½ kg curd
½ cup cream cheese (optional)
Juice of half beetroot
2 tsp honey
1 finely chopped apple
1 cup pomegranate pearls
1 cup of YogaBar Muesli
2 tbsp YogaBar Nut butter
4 Digestive Biscuits







Method

1.   Place the curd in a cotton cloth and hang it up over the kitchen sink so that the whey drains out. It will need 2 -3 hours

2.   In a mixing bowl add the hung curd, cream cheese,  beetroot juice and honey and stir well till creamy. Keep aside to use when you start layering.

3.    Break the digestive biscuits into pieces and grind them to a powder, using a mixer. Keep aside.

4.   Take the Cutting chai glasses, make the first layer of powdered digestive biscuits.

5.   Add some chopped apples and pomegranate.

6.   Now add a layer of hung yogurt and cream mixture.

7.   Add a layer of Yogabar Muesli followed by a layer of hung curd.

8.   Add another layer of Muesli and finish the top with dark chocolate Nut butter.

9.   Garnish with pomegranate and some other sprinkles.

10.   Fill up all the 5 glasses in a similar manner.

11.   Serve immediately or after chilling in the refrigerator for a couple of hours. However the chilled version tastes much better.



Notes:

1. You can play around with the recipe to add fruit of your choice

2. No real consistency in quantity, you can make thinner layers of yogurt of fruit.

These ice-cream have 60 percent less calories than any regular  premiere brand ice-cream. No added sugar and12 delicious flavors to choose from. My family went gaga over the flavors we got to try.

I whipped up this exciting dessert with Tutti Frutti. Added more fun with fresh fruits. It looked and tasted so yummy. Note the simple recipe.




Ingredients 


1 tub of Brooklyn Creamery Icecream
1 cup chopped pineapple
1 cup chopped apple
1 cup chopped strawberries
1/2 cup pomegranate seeds
A few walnuts
1 tbsp Honey

Method


1. Chop the fruits in small pieces. Gently mix all the fruits in a bowl.

2. Add the honey to the fruits and mix again. 

3. Melt the icecream and fold half of  it in with the fresh fruits.

4. Take your best dessert glasses and fill it 3/4 with the fruit ice cream mixture.

5. Now top it with more icecream.

6. Garnish with walnut and pomegranate.

7. Freeze it or chill it, as you please before serving.

Note 


You can add different fruits of your choice to this Fruity Icecream dessert.
For variation take two flavors of icecream. And you can top it with chocolate or kulfi.

Quick and easy low cal dessert with hung curd

Hello friends,

Its so difficult to stay of sugar, every time the craving comes back with an excuse to eat something sweet. But I have consciously made an attempt to avoid the white refined sugary products and opt for sweet healthy alternatives.  

The next best alternative is honey however I prefer to sweeten my desserts with natural fruits like mango, papaya, grapes that have equal amount of natural sugars.Raisin and dates are another good option. 


Today I have stirred up an oats granola mix with curd, apple and mango dessert. I also used some left over walnut cake I recently brought back from Pune. You can use some digestive biscuits or give it a miss if you wish.




Ingredients
( To make three potions of this dessert)

1 cup hung curd
1/2 cup roasted pressed oats ( I used a oats breakfast mix)
1 cup chopped mango
1 chopped apple
Left over cake


Method 

 1. To make hung curd - You need to put regular curd in a muslin cloth and let it hand till the water of the curd oozes out. The curd will thicken and become half the size.

2. In a blender, whisk the hung curd and mango pieces to make a paste. Do not add any water. This will be mildly sweet, if you want it sweeter you can add a tablespoon of honey.

3. Wash the apple thoroughly and chop it into extremely  small pieces.




4. Take dessert glasses of your choice, you can even take shot glasses or regular glasses. Add the cake crumbs to the bottom and press it with the back of spoon.

5. Add a layer of curd mix, lightly bang glass for layer to even out.

6. Now add a layer of oats and apple pieces. 

7. Repeat the layer of cake, oats and curd. Lastly again top with chopped apple and garnish with walnut.

8. Chill before serving and enjoy this yummy dessert



Note for variation

1. Add some chocolate to the curd, kids will love it.

2. Optional fruits to try with -
papaya and musk melon have good quantity of sweetness.

3. You can use a wine glass for setting the dessert.

3. If you don't have cake then use digestive biscuits.

4. The oats can be mixed with almonds and walnuts to make a crunchy layer.

5. No curd, use custard.

The options are endless. Its all about enjoying what you make and serving it with pride.

Smoothies - Two easy Low cal desserts with banana

Toh kuch meetha khane ka din hai!
The craving to indulge into something sweet has made me try out two desserts. They both are low cal, healthy and fruity.



Smoothies are very refreshing this weather. First I tried a Mango Banana Smoothie made with fresh mangobanana, honey and milk. You can use yogurt instead of milk.
You can add more milk, but I like it like a thick shake and very fruity.
The second dessert is a protein chia seed shot made with chia seeds, dates, milk, almond powder and banana.







Banana Mango Smoothie 
Ingredients
I cup Mango Puree
1 Banana
I cup milk/ plain yogurt
Sugar/honey optional

Mango banana smoothie

 Method
1. Take two mangoes, wash peel and remove the pulp. You can blend it in a mixer or do it with your hands.
2. Chop up the banana, now combine the milk, mango pulp and banana.
3. Put this all in a mixer and blend well4. Pour this in glass and top it with pumpkin seeds and some pistachio powder.
5. Keep it in the chiller for some time before serving.

6.You can use yogurt instead of milk.
7. If mangoes are not sweet sugar can be added but I avoid it. Enjoy the natural sweetness and goodness of the fruits.




Chia Banana Date Pudding

Ingredients

¼ tsp vanilla extract
¼ tsp cinnamon powder
1 cup whole milk
½ cup finely chopped dates
2 tbsp Almond powder
2 tbsp chia seeds
 

Method

1. Soak two big tbsp of chia seeds in half cup water. For best results leave this overnight.
2. Take milk and mix the almond powder in it.
3. Add chopped dates, cinnamon powder and dates.
4.Blend this in a mixer for 1 minute only.
4. Now stir in the chia seeds. Pour this in small dessert glasses.
5. Top it with sliced bananas and cinnamon powder. 


Enjoy this chilled and see how your stomach will say a big thank-you to you.
