w - Whole wheat Flour/Atta Ladoo Recipe

Craving something sweet and healthy during a lockdown? Well, I found the perfect recipe while surfing Facebook
It was this fabulous post by Chef Suunil G Murudkar who had posted great drool-worthy images of his homemade Whole Wheat flour Ladoos.

When I asked him for the recipe he happily shared it with me.
So I will dedicate this post to his delicious Whole Wheat Ladoos

Ingredients


3 cups wheat flour
2 cup castor sugar
1 cup ghee
1/2 cup powdered nuts

Method


1. Take the wheat flour in a heavy bottom pan.

2. And roast it on low flame. Constantly stir the flour as it may burn from the bottom. Constantly stir it for 8 to 10 minutes.

3. The flour will turn light brown in colour. See that there is an aroma of the flour. That will let you it has  been roasted well.

4. Now bring it to room temperature.

5. Once on room temperature add the powdered sugar and ghee.

6. Also add the powdered nuts and bond with your hands.

7. Later roll them into ladoos.

8. Store in an airtight jar.

P- A really easy Pancake Recipe

 Hello everyone,

So after trending Dalgona Coffee its time for pancakes to be cooked up in every home during Quarantine. Pancakes to be enjoyed and indulged with honey, cream and the fruit of your choice. Searched the net for a very easy Pancake recipe. My daughter Zenia helped me out and shared her recipe with me. This I wish to share this with you all.

It is fun to see those pancakes rise and fluff up. Make them for your family and enjoy them during breakfast time.
Are you all ready? Note down the ingredients and let's make the batter together.

2 cups refined flour ( Maida)
¼ cup of white sugar
½ tsp of salt
1 tsp baking powder
½ tsp of baking soda
2 large eggs
2 cups of buttermilk
¼ cup of melted unsalted butter
1 cup of fresh Rasberries/blueberries/bananas
Maple syrup/Honey for garnish



Method

1. Take a large bowl; sift the flour, sugar, salt, baking powder, and baking soda together. 

2. Take another bowl. Crack the eggs and beat them with buttermilk and melted butter. 

3. Now add the sifted flour to the egg mixture with a spatula, to make a thick, lumpy batter with no big lumps. 

4. Heat some butter in a nonstick pan, over medium heat. Now add half a Ladle of batter into the hot skillet. Make a nice small donut size circle. Cook it for 40-60 seconds. The pancake will rise and tiny air bubbles will be seen in the pancake.

5.  When the bubbles are seen on the pancake and the edges begin to brown, turn it on the other side and cook it. Keep it for 2 minutes till it cooks through.

6. Continue making the pancakes the same way.

7. Now serve it hot, with fresh fruit of your choice ( rasberries, strawberries, banana) maple syrup or whipped cream.

N - Easiest Nan Khatai Recipe

Hello Friends, 


Nan Khatai is one recipe I had first learned way back in my school days.
I vividly remember my home science teacher Mrs. Singh explaining and mixing the cookie dough while demonstrating the recipe.


These cookies are made in different ways. Some make it with eggs, while others do an eggless version of the same. cookies are made in so many different ways. It can be made with either maida or gram flour.
They are very easy and can be made from start to finish under 30 minutes. I hope you like my recipe and will try this out. Do let me know how it turns out.

Nan Khatai



Ingredients


2 cups Refined flour (maida)
1 cup Castor Sugar
1 cup of oil
1 tsp Nutmeg powder
A few nuts



Instructions


1. Sift the flour, sugar, and nutmeg together through a sieve.  Do this twice.

2. Transfer the mixture in a bowl and add oil now and mix it into a dough.

3. Divide it into equal balls. Flatten it to make a round cookie shape.

4.Make an X shape on each nan Khatai and place a nut on the top. You can use almonds or Cashews on the top.

5. Preheat the oven at 200 ° Celsius.

6. Grease the baking tray with oil and place the ban khatais on the tray keeping an one-inch gap. As the cookies will swell in shape after baking.

7. Now bake the nan khatais for 15 t0 18 minutes at 180° Celcius.

8. After baking, let the nan  khatai cool down before taking them off the tray

9. Add the milk only if the mixture seems dry.

L - Lemon Rice Recipe #BlogchatterA2Z


Lemon rice is one of the most loved dishes in South India. It's cooked at least once a week in most households. Often eaten with rasam,  raita, or chutney.




This makes a really easy and frugal meal during Quarantine. It can be prepared with leftover rice too. A meal you can put together under 30 minutes.  With a spicy rasam, pickle and  poppadums on the side.


Ingredients



2 tbsp oil
2 tbsp peanut
2 tbsp cashew
1 tsp mustard seeds
1 tsp chana dal
1 inch ginger, finely chopped
2 chilli, finely chopped
A pinch  of asafoetida (hing)
1 sprig of curry leaves
¼ tsp turmeric powder
2 cup cooked rice
Juice of half lemon
2 tbsp finely chopped coriander
2 tbsp lemon juice

Method


1. In a large kadai roast peanut and then roast 2 cashew until it turn golden brown and crunchy.

2. Keep it aside to use further in the recipe. 

3. Take 2 tbsp  oil in the kadai and  add 1 tsp mustard seeds and 1 tsp chana dal.

4. Also add 1 inch finely chopped ginger, 2 chopped green chilli, pinch hing and few curry leaves.

5. Let it splutter on medium flame for one minute. 

6. Now add in ¼ tsp turmeric powder  and saute slightly.

7. Now add 2 cup cooked rice and salt  tsp salt.

8. Add 2 tbsp coriander and  lemon juice  and mix well.

9. Also add the peanuts and cashewnuts and garnish with coriander leaves. 

10. Now serve this delicous  lemon rice with rasam, papad or chutney.

J - Easy Jalebi Indian Dessert Recipe

 Hello Friends.
Today I write a sweet Recipe for the Letter J - Easy Jalebi Indian Dessert Recipe, #BlogChatterA2Z Challenge 2020.

I needed to fix my sweet cravings for Jalebis. So today I made a batch of those beautiful round juicy circles that a delightful to savor hot and cold. Jalebis are prepared on auspicious occasions or festivals. But I have discovered an easy recipe, in fact, an instant one. The batter can be even stored in the freezer to be used at a later stage when needed.


Easy Jalebi Indian Dessert Recipe,


Ingredients

1 cup Maida
4 tbsp powder of Urad Dal powder
2 tbsp Ghee
1 sachet Eno
1/2 juice of a lime
Water to make the batter
Cooking oil

For the sugar syrup

500 gms Sugar
Kesar / Saffron few strands
Kesar color few drops
250 ml of water


 Method 


 For the sugar syrup

1. Take a saucepan, add one cup of water, sugar, Kesar strands, and yellow color. Stir it on low flame and bring it to a boil.
 2. Keep stirring on low flame,  cook further for 2 minutes. The syrup should be thickened enough in   consistency. Let it cool and set aside for later. 
 
 For making the jalebi

 1. Take the Urad dal and grind it to a fine powder. Strain the dal and keep aside.

 2. Now in a mixing bowl combine maida, urad dal powder, Eno powder, lime juice and the ghee. Using your hand to gently kneed the mixture. Add a little water to make it a smooth paste.

3. Now add the mixture into a piping bag and snip the end to make a small hole for the mixture to come out.

 4. For frying the Jalebis, pipe the batter into small circular patterns, directly into the oil for frying. 

5. Heat the oil in a pan, and dip the jalebis in medium oil.

6. Fry on both sides till light brown in color. 

7.  After the jalebi is brown, remove the jalebi and dip them in the sugar syrup you have prepared earlier. 

8. Soak the Jalebis for a minute and then remove onto a serving plate.

 Once all the jalebis are done,  garnish with some chopped pistachio and serve the yummy Jalebis hot.

I - Easy Idli Recipe #blogchatterA2Z

Hello Friends,

 Isn't Idli everyone's favorite south Indian dish?  Savour it with sambhar or chutney. Idli, the humble round shaped steamed rice-lentil cake, is one of the healthiest breakfast dishes. It is the staple food of most households in India.  Made by steaming the batter made from short-grain rice and urad dal.





It can be prepared in less than 30 minutes however the batter needs to be fermented and prepared some time in advance.


Ingredients 










 The Soaking and Fermentation Part takes time to prepare. However, if you have the batter ready it takes 20 minutes to get ready. However, I will explain the entire recipe in my blogpost.

Method



1. Soak the rice and add fenugreek seeds to the rice. Soak it in water for 4-6 hours. Soak the urad dal too for the same amount of time.

2.  Remove all the water from the urad dal and grind it to a fine paste. Add water accordingly.


3. Now Grind the rice to a coarse paste (add water as needed). Later mix both the pastes together in a vessel and stir it well. Make sure that the consistency is not too thin.


4. Keep the batter in a warm place to ferment. Once the batter will rise then add salt to it and whisk to mix it well.

5. Grease the idli stand with cooking oil, fill the mould with batter. 

6. Add water in the idli steamer and put it on the flame to heat up. Now place the idli stand inside and close the lid. Let it steam build for 8-10 minutes before switching off the gas.



Note 


If you are using a cooker to prepare the Idlis then do not use the whistle while steaming. And steam it for 10 minutes. Also wait for another 5 minutes and then use a sharp spatula to scoop the idlis out. 


Enjoy hot hot idlis with coconut chutney and a bowl of Sambhar

H - Hakka Noodles - Vegetarian Restaurant Style

Its days of Quarantine and we are all indoors and cooking at home. Ordering food from outside is a total no-no in times like these. And what if you crave a bowl of Hakka Noodles?

So let's decide to cook up this interesting  Indo Chinese dish  here today. Well, all you need is some vegetables and a packet of noodles to prepare  Veg Hakka Noodles. And yes, it can be done under 30 minutes for sure.

So here I am preparing and sharing the recipe  of yummylicious and a  perfect restaurant style veg Hakka noodles.





Ingredients


1 packet Hakka Noodles
2 cloves Garlic
2 slit green chilies
1 bunch spring onions
1/2 cup Mixed Vegetables ( cabbage, carrot, beans and bell peppers)
1 tbsp Soy Sauce
1 tsp Rice Vinegar
1 tsp chilli sauce
Salt to taste
2 tbsp cooking oil
1 tsp Sesame oil



Method


1. At first, we need to boil our noodles before we actually start cooking it.
You can follow the instruction mentioned in the noodles packet for cooking it.

2. Or then put one liter of water to boil,  add a pinch of salt and then break the noodles into 4 halves and add it in.

3. Let the noodles cook for 3 to 4 minutes. Turn off the heat and drain the water. Immediately run it through cold water to separate the noodles and avoid them from sticking to each other.

Now to make the noodles

4. Chop all the vegetables, spiring onions and keep it aside.

5. Take a large wok or kadai and add the two tablespoons of cooking oil. When the oil is hot, add the chopped garlic and let it turn slightly brown.

6. Now add the green onions and green chilies and cook for one minute.

7. Next, add the cabbage, other cut vegetables, and salt. Mix and saute over a high flame for two minutes.

8. Reduce the flame, add the soy sauce, vinegar, and sweet chili sauce and allow the vegetables to cook for two more minutes.

9. At last, add the cooked noodles and one tsp of sesame oil and toss the noodles.

10. Serve it piping hot with a chili sauce or gravy of your choice.

11. Let it cook for two more minutes, and that's it. Veg Hakka noodles are ready.

12. Serve it hot with your favorite gravy or ketchup.

F- Fish and Chips Homestyle #BlogchatterA2Z


Its lockdown and I am craving restaurant type fish and chips. What shall I do?
My freezer had two big pieces of Tilapia fillets. You can use any chunky boneless fish for this recipe. And  chips are definitely easy to make.




So yes, I gave into my cravings and decided to try an easy recipe and of course without beer batter.
For the first time, I made homemade fish and chips, following a simple recipe. You just  cannot beat home cooked chips and the fried fish. It was a easy batter and the ingredients were available in the kitchen
So do note down the recipe.


Fish and Chips


Ingredients

2 pieces fish, use fillets
1/2 juice of lime
2 egg
1/2 cup milk
2 tbsp cornstarch
1 tsp pepper
1 tsp paprika
Salt to taste
2 large potatoes
Oil for frying


Method


1. Wash and peel the potatoes.  Cut them into thick sticks.

2. Now add some cooking oil to a frying pan. And add the potato sticks to the hot oil.

3. Fry on all sides and remove the chips on a kitchen napkin. Sprinkle some salt and keep aside for serving.

4. While the chips are frying, you can prepare the fish batter. Slice fish fillets into 2 or 3-inch strips; place in a bowl with the lemon juice. 

5. Beat the eggs and milk in a shallow bowl.

6. Mix together cornstarch, salt, paprika, and pepper in a plate.

7. Add some more vegetable oil in the frying pan.

8. First dip fish fillets in the egg batter and  then coat it in the cornstarch mixture.

9. Dip slowly into the oil.  Do not disturb the fish at first or it will break. Wait for 30 to 40 seconds, lower the flame and then turn to the other side to fry.

10. Deep-fry until golden brown in colour.

11. Drain the pieces of fish on a wire rack.




12. Now plate your fish and chips together. Add some fresh grated salad and a mayo dip.
Enjoy.... Restaurant style Fish and chips at home in less than 30 minutes.

E- Spicy Egg Curry Recipe #BlogchatterA2Z


 Hello Friends, 

For the letter E, I am doing a simple and spicy boiled egg curry that can be made in less than 30 minutes. This egg curry is a delicious spicy preparation of the eggs in an onion and tomato-based gravy.

Ingredients


3 - 4 Eggs
2 Onions  
6 Tomatoes
1 tsp Turmeric powder (Haldi)
1/2  tsp Garam masala powder
1 tsp Coriander Powder (Dhania)
1 tsp Red Chilli powder
1/2 teaspoon Sugar
1 tsp ginger garlic paste

Coriander Leaves
2 tbsp cooking oil 




How to make Quick And Simple Egg Curry Recipe 

 

Method

1. Start by boiling the eggs for 12-15 minutes. Cover the pan with a lid the eggs will cook faster. 
2.  While the eggs are boiling, start with the egg gravy. Heat 2 tablespoons of oil in a Kadai; add the roughly chopped onions,  garlic and ginger paste. Sauté for a few minutes until the raw smell goes away and the onion changes its color to pink.  
3.  Once the onions are well fried, add in the turmeric powder, sugar, garam masala powder, coriander powder, and red chili powder. Stir all these masalas into the onion masala until well combined. Keep stirring for 2-3 minutes.

4.  Add in the finely chopped tomatoes and stir in for 2 to 3 minutes.

5. Now switch off the gas and transfer the mixture into a mixer and grind it to a pulp.

6. Now transfer it back to the Kadai and add half a glass of water.

7. While the curry is boiling, crack the eggs and take off the shells. 

8. Add the eggs to the curry and let it simmer.

9. Let the curry coat the eggs. Garnish it with coriander leaves. 

10. Your quick and delicious egg curry is ready. Makes a perfect afternoon meal when served with steamed rice, salad, and boondi raita. 

Note-


You can add tomato Puree instead of whole tomatoes to quicken the procedure.

D- Easy Dalgona Coffee Recipe

Hello friends,

There is a new type of coffee, called Dalgona coffee that is trending on the internet especially Instagram. Instagrammers and foodies are whipping up this concoction and posting fantabulous images of this coffee to get praises and applauds from the world over.

In my quest to stir up easy recipes, I couldn't resist stirring up a Dalgona Coffee for the letter D for the #BlogchatterA2Z challenge 2020. 

 The Origin of Dalgona Coffee


1. Dalgona Coffee, a whipped coffee drink named after a Korean candy,.

2. This trend was first popular in South Korea and is widely spreading across the world.

3 As more and more countries have started recommending social distancing due to the spread of COVID-19, Dalgona coffee is the bonding food that unites people across the world.

4. It is a simple recipe and visually so appealing.

5. No better way to get your caffeine fix while quarantining and maintaining social distancing at home.

6. This frothy creamy mixture can be made hot or cold.

To make one cup of Dalgona Coffee

Ingredients

2 tsp of coffee granules
2 tsp of sugar
2 tsp of warm water
1 cup milk 


Method

1. Add  2 spoons of coffee powder and 2 spoons of sugar with 2 tsp of warm water in a bowl. 

2. Now mix it with a blender or whipper till it will become thick and changes color to light brown. 

3. The quantity will double up and will resemble whipped cream. 
Mix it well till the consistency becomes thick.

4.  Whip the coffee mixture until it is light brown, fluffy and holds stiff peaks when the whisk is removed.

5. Now add milk in a glass. and top it with the frothy Dalgona frothy cream. 

6. You can also add some cocoa powder at the top. 
 
7. Don't forget to grab a picture before you sip this excellent creation.

Chocolate Sponge Cake or Choconut Cake

Hello Friends

It's time to make and bake a cake. But a very simple and easy chocolate sponge cake that can be done under 30 minutes. A perfect Quarantine teatime cake for the entire family. It's homemade and above all so simple to prepare. You can even get the children of the house to help in the mixing.



For this chocolate sponge cake, you will need the following ingredients.


Ingredients

3 eggs
1 cup of sugar
100 grams of butter
1 cup maida
1/2 tsp baking powder
1 teaspoon cocoa
Walnuts(optional)
1/2 cup milk
1/2 tsp vanilla essence
Cooking oil for greasing

Method


1. Crack the eggs in a bowl, to this add the sugar. Now beat the eggs and sugar till light and fluffy.
2. Now soft the self-raising flour(maida) baking powder and cocoa powder together.
3. Add this to the eggs and sugar mixture and stir well. You can do this by hand or using an electric beater.
4. Add vanilla essence and milk to this batter. Also ads the walnuts(optional)
5. Grease a baking tin with cooking oil and pour the cake mixture into the tin.
6. Preheat the oven at 180°C for 5 minutes.
7. Now bake for 15 to 20 minutes and see your cake rise in the oven.
8. This cake can also also be prepared in a microwave convection oven. Bake for ten minutes.
9. To check the cake poke a dry knife inside. If it comes out clean the cake is cooked properly. If not you need to cook it further.
10. Let it completely cool down before turning it over.
11. Now your chocolate sponge cake is ready to be served at teatime.
12. You can add some chocolate sauce on the top to make it more dense and indulgent.

Easy Beetroot Cutlet Recipe #BlogChatterA2Z

Easy Beetroot  Cutlet Recipe


Hello Friends,
Today is the second letter of the alphabet B. And I bring to you a healthy and easy beetroot cutlet recipe. This crispy delicious beetroot cutlet is made with beets, potatoes, and spices.
This cutlet can be enjoyed plain or can be paired with some buns and coleslaw salad or eaten as a side dish with dal and rice. It even goes well with mint chutney and sweet chutney along with some yogurt.





This can easily be achieved in 30 minutes of time. Note the ingredients and make it soon.

Ingredients

2 medium Beetroots
2 small Potatoes
2 slices of Bread
1/2 finely chopped onion
1/2 tsp Red chili powder
1/2 tsp Amchur Powder
1/4 tsp Garam Masala
1 tbsp coriander leaves
Salt to taste
All-purpose flour - for coating



Method



1. Take a mixing bowl and add the boiled potatoes and grated beetroot. Mash lightly with the back of a spoon.

2. Add in finely chopped onions, coriander leaves, and dry spices.

3. Dry grind the bread in a mixer and add this to the mixture. 

3. Now knead with your hands to make a dough.

4. The dough should not be sticky.  Check it by rolling on your palm to make a ball. If it sticks you can add a little gram flour.

5. Now divide the dough into small round balls and flatten with your palm.

6.  Now heat a pan with oil for shallow frying and set the flame to Medium. While the oil gets heated, take a small portion of the dough and add it to the oil.

7. Fry till they crisp from outside.

8. Now serve it the way you wish.

Note


You can air fry the cutlets or just brush little oil in a nonstick pan and cook it accordingly.
