Iftaari Snack - Chicken Bread Pizza

Hello Friends.

So it's the month of Ramadan and during this month, Muslims traditionally fast daily from sunrise until sunset. After that they break their fast. The meal is known as iftar, is the most important part of the day. They break their fast with some khajoor and water, later savour home made delicacies and falooda to cool down.

Every year, I prepare some Iftaar treats for my neighbours and friends. This time I tried to make a chicken pizza with bread. But even the pizza sauce was made at home. The steps look elaborate but its not the case.

For the Pizza Sauce

INGREDIENTS
1⁄2cup chopped onion
2 tbsp  minced garlic
2 tbsp oil
1cup chopped fresh tomato
2 tbsp tomato ketchup
2 tbsp oregano
Salt to taste
Pinch of sugar

METHOD

1.Take a pan, add oil and  saute onion and garlic  until tender.
2.Stir in remaining ingredients.
3.Let it cook on slow fire for 30 minutes.

                  For making the pizza

INGREDIENTS

6 slices of white bread

1 cup boiled and shredded chicken
1 cup pizza sauce
3 cheese cubes ( you can use cheese slice for each pizza too)
1 finely chopped capsicum
50 gms butter

METHOD

  1. Preheat oven at 250degrees/ you can use a deep bottom fry pan with a lid too to make this bread pizza.
  2.  Butter each slice of bread.
  3.  Now spread the pizza tomato paste ( recipe is given above)
  4. Add the topping of capsicum and shredded chicken
  5. Sprinkle a handful of cheese on each slice to cover the entire slice.
  6. Now transfer  the slices in the oven  and bake for 10-15 minutes till cheese melts. Or place in a lightly buttered pan and cover with lid. Cook this on low flame till cheese melts.
  7. Cut into small squares or strips so that it can be easily picked up and eaten in one bite.
  8. I  served it along with other items prepared. I had make chicken cutlets, mango custard and rose milk.

Happy Feasting now

Spongy Dhokla in minutes

Hello friends.
Lets make some delicious home made dhokla today. Khaman Dhokla as it is popularly known  is originally a  Gujarati breakfast/snack item. It is made using besan, baking soda and curry leaves. This vegetarian snack is a hit at kitty parties and picnics. Its light and spongy, and its addictive taste is the main reason it is relished so much.

So come on, make along with me, Farzeen Irani. Note the ingredients below.

Ingredients

For Batter
1 cup gram flour (besan)
1 tbsp rawa
1 tsp sugar
1 tbsp cooking oil
1 tsp Green Chilies (paste)
1 tsp Ginger (paste)
1 Eno sachet

1/2 cup curd
1 cup water
1 tsp lemon juice
Salt to taste

For Garnish 1 tsp mustard seeds
4 sliced green chilli
Few corriander leaves
1 tsp oil
15 curry leaves

Method

1.      In a bowl, add gram flour, rawa, curd and water.

2.      Mix well with a strong hand to make a smooth batter. The batter should be of thick like pancake or dosa batter.

3.      Now add sugar salt and set aside for minimum 3 hours covered with a lid.

4.      At this stage add the ginger and green chili paste to the batter.

5.      Now in small bowl take a tsp of Eno fruit salt, 1tsp oil and lemon juice and mix well.

6.      Add this to the batter and mix well.

7.      Grease a baking dish that will fit into a cooker or steamer.

8.      Pour this batter into the greased pan and steam for 10-12 minutes or till done. You can poke a knife into the dhokla to check. If the knife comes out clean, its done. If batter sticks to knife the dhokla is raw.

Cool for ten minutes and cut into big cubes.

For the garnish ( Tadka)

Heat little oil in a small pan and add mustard seeds and curry leaves allow to splutter. Remove and pour it over dhoklas.
Garnish with coriander and slit green chilies. Serve it fresh at tea time with green chutney or sauce.

Thank you Mrs Arundhaty Vijayan for sharing this easy recipe with us

.

Pepper chicken with mushroom sauce

Hello Everyone,

I am Farzeen Irani, Sweetannu's sister. Today I will share a simple recipe of mine that is ready to be served on the table in  just 15 minutes. This recipe is totally my own invention. You can check the step by step recipe in the images I have shared below.

Pepper chicken with mushroom sauce

Ingredients

For stir fry chicken breast
Boneless chicken breast,
Salt n pepper
Barbeque sauce (optional)
Garlic paste
Olive oil

For mushroom sauce
Few freshly sliced mushrooms
1 tsp Basil
1 tsp parsley
1/2 cup grated cheese
1 tbsp fresh cream
1 tsp Pepper powder
Avoid salt since you are adding cheese

Step by step Method

1. Slice the chicken breast in half and marinate with salt, pepper, garlic and olive oil. Barbeque sauce is optional. Leave for 10-15 minutes. Pan fry on both sides for 5 minutes till done. Chicken breast doesn't take a long time to cook. If you over cook it, it gets chewy and is not enjoyable.

2. Chop the mushrooms, basil, parsley and grate the cheese. It is always good to prep before cooking as it saves time and you enjoy cooking when every thing is ready.

3. In a sauce pan add the  fresh cream and bring to boil on a slow flame. Now add the mushrooms, parsley, basil cheese and mushrooms. Season with pepper. Cook on a slow flame till you get a thick sauce and mushrooms are mushy.

4. Once the sauce is done, arrange the chicken fillet and serve mushrooms on the side. A slice of garlic bread and wine would be so fine. Dine in style because its saturday night.

Bon appétit Everyone
