Y – Roasted Curried Yam


 Roasted Curried Yam

Yams are edible root vegetables that are originated in Asia, Africa, and the Caribbean. It is often mistaken for sweet potatoes. But the yam is sweet and starchier. Yams are packed with vitamins, minerals, and good fiber. It is called Suran in Hindi. It is a very tough vegetable to cut.
A yam can be curried, fried, or stewed with other ingredients to make a vegetable. I decided to a roasted curried yam, the seasoning is smoky and savory and so delicious. It is easy to cook up in 30 minutes.  

Roasted Curried Yam


Ingredients



2 medium-sized Yams
2 tsp curry powder
1 tsp tomato ketchup
½ tsp pepper
¼ tsp turmeric powder
Salt to taste
juice of half a lime
1 tsp chopped coriander leaves for garnish.

Method



1. Wash the yam thoroughly, peel, and chop them into cubes.

2. Now apply one tablespoon oil, curry powder, salt, and turmeric and rub it in the yam. 


3. Preheat the oven and arrange all the yam pieces on a greased baking tray and bake for 15 minutes. 

4. Now take a deep bottom pan to add the remaining oil, toss the yam with tomato ketchup, pepper, and some lime. Stir fry on slow for 5 to 7 minutes. 

5. Garnish with coriander leaves and serve it as a starter. 


This  Roasted Curried Yam can be served as an appetizer, snack, side dish or can be even added to Parsi style Stew

X - Easy Xmas sweets and treats


Hello friends,
Today is the third last post for letter X for my BlogchatterA2Z 2020 challenge.






Xmas is the time to indulge, make merry, and enjoy sweet goodies with family.
Just a snippet of some of the treats I make during the festive season. Today I bring to you 3 easy dessert fixes.


1. Raspberry flavored Jello Shots


Ingredients


I packet Raspberry flavored Jell-O mix
2 cups boiling water
1/2 cup ice water
1 cup Vodka
Dash of lime

Method


1. Stir the Rasberry Jello into the boiling water until dissolved.

2. Now Pour in the ice water and vodka, a dash of lime, and mix well.

3.  Pour into shot glasses or plastic cups and freeze for 1 to 2 hours before serving.



Butter Cookies

These butter cookies can be shaped and created in the way you wish. Bake it to enjoy the buttery,  crunchy and addictive flavour.

Ingredients


1cup soft butter
2 tsp vanilla extract
3 cups all-purpose flour
⅔cup sugar
2 eggs
1/2 tsp baking powder
½ tsp salt


Method


1. Take a large mixing bowl, cream butter until light and fluffy.
2. Now add the sugar and mix it in.
3. Also stir in the vanilla extract.
3. Add one egg at a time,  eat each for five minutes then add the second one.
5. Now sift the flour, baking powder  and salt together
6. Add this flour to the mixture and stir well.
7. Keep covered for 15 minutes.
8.  Now roll the pastry dough like a roti, to about ⅛ inch thickness.
9. Use a cookie cutter and cut into shapes of your choice.
10. Place it on a greased baking tray but 1 inch apart.
11. Now bake at 350'C. for 10 minutes or until lightly brown.
12. Cool and store.




Mini Tart


These mini tarts are extremely quick to prepare if your base is ready. In fact I pick mine up from the nearby bakery to make the process even faster.

Ingredients


1 cup heavy whipping cream
1 cup cream cheese
1/2  cup sugar

Topping

1/2 cup of fresh fruit of your choice (strawberries, pineapple, black grape kiwi)


Method


1. Take a large glass mixing bowl, add the fresh cream and use an electric  hand  to whip

2. Whip till the cream stiffens into peaks.

3. In another bowl whip the cream cheese and sugar together.

4. Now gently fold in the whipped cream.

5. Now spread this mixture into the tarts or pipe it through a piping bag.

6. Place it in the refrigerator for an hour before decorating it with cut fruits.

 I love what I do, especially during the Christmas Season. To cook, bake and decorate and then serve up lots of sweet surprises to my family. 




 A balanced diet is a Christmas cookie in each hand. 😆⁣ So just done count your calories.

w - Whole wheat Flour/Atta Ladoo Recipe

Craving something sweet and healthy during a lockdown? Well, I found the perfect recipe while surfing Facebook
It was this fabulous post by Chef Suunil G Murudkar who had posted great drool-worthy images of his homemade Whole Wheat flour Ladoos.

When I asked him for the recipe he happily shared it with me.
So I will dedicate this post to his delicious Whole Wheat Ladoos

Ingredients


3 cups wheat flour
2 cup castor sugar
1 cup ghee
1/2 cup powdered nuts

Method


1. Take the wheat flour in a heavy bottom pan.

2. And roast it on low flame. Constantly stir the flour as it may burn from the bottom. Constantly stir it for 8 to 10 minutes.

3. The flour will turn light brown in colour. See that there is an aroma of the flour. That will let you it has  been roasted well.

4. Now bring it to room temperature.

5. Once on room temperature add the powdered sugar and ghee.

6. Also add the powdered nuts and bond with your hands.

7. Later roll them into ladoos.

8. Store in an airtight jar.

V - Easy Vermicelli Upma/Pulav

Hello Friends,

So we have reached the letter V in our BLOGCHATTER A2Z Challenge 2020.
I thought why not try to make a Vermicelli Upma/Pulav. I checked on Instagram for a really easy recipe that can be done under 30 minutes and I found this under the hashtag #Vermicelliupma.
This recipe belongs to @Chocolatetraffic. Do check out her recipe below. 


Ingredients:



1 cup Vermicelli/ Semiya
3 tbsp Finely Chopped Carrot
3 tbsp Finely Chopped Capsicum
3 tbsp Finely Chopped beans
3 tbsp Peas
2 tbsp Coriander
1 tbsp Lemon Juice
1 tsp Mustard
½ tsp Urad Dal
1 tsp Chana Dal
Few Curry leaves
2 tbsp Peanuts
1 inch Ginger
1 Red Chili
2 Green Chili
2 tbsp Onion
½ tsp Turmeric
Oil
Salt to taste
Water

Steps to cook Vermicelli:

1) In pan roast 1 Cup vermicelli in 2 tsp oil. Once it turns golden brown add boiled water into it.

2) Add ½ tsp salt and boil for 3-4 minutes. Drain off the water and allow cooling completely.

Steps to cook Upma:

1) In pan heat 4 tsp oil and add Mustard, Urad Dal, Chana Dal, red chili and curry leaves. Also add peanuts and roast on low flame.

2) After that add ginger, green chili.

3) Now add Onion and sauté well.

4) After 2-3 mins add all vegetable (peas, carrot, capsicum, beans) and sauté for 2-3 mintues.

5) Finally add turmeric and salt (as per taste) and cook till all vegetables turn soft.

6) Once vegetables are cooked well add cooked Vermicelli/Semiya and mix gently.

7) Add lemon juice and garnish with Coriander.

U - How to make Usal - Maharashtrian Style Recipe

Usal Maharashtrian Style Recipe


Usal pav is the traditional Maharashtrian dish generally a street food. It is made with mixed legumes and sprouts.  You can use any of the following: matki, moong, white or green vatana. It can make an extremely healthy breakfast or evening snack.
The ingredients for this recipe may look long but they are basic and are available in every kitchen.

Usal Maharashtrian Style Recipe


Ingredients


1cup Mixed Legumes (Of your choice)
1/4 tsp Turmeric powder
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1 tsp coconut powder
1 sprig of curry leaves
1 cup finely chopped Onion
1 finely chopped Tomato
1 tbsp  Peanut powder
1 tsp Ginger-Garlic paste
1 tsp Gatti masala
1 tsp garam Masala powder
Salt to taste

For Garnish


Finely chopped Onion
Coriander leaves
Sev


Usal Maharashtrian Style Recipe


Method



1. Wash the sprouts and legumes well and put them into a pressure cooker.
2. Add turmeric powder, a  pinch of salt, water and put it on the gas for just two whistles
3.Now take a Kadai and heat oil in it.
4.  Add the mustard seeds and let them crackle.
5. Now add the cumin seeds and let them splutter.
6. Make the gas slow and add hing, curry leaves, onion, and keep sauteing for 5 minutes.
7. Now add the tomato and mix well.
8. Fry the tomato until it cooked nice and soft for some time. Also, add the peanut powder and mix well.
9. To the same pan add ginger-garlic paste, garam masala, Gatti masala, coconut powder and mix well.
10. Fry the masala till the oil separates from the mixture.
11. At this stage add the boiled legumes cooked legumes along with water, salt to taste, and mix well.
12. Now add water to the dish and let it further simmer for another 8 to 10 minutes.
13. Keep the Usal in running consistency.
14. For a serving portion add the Usal to a bowl, garnish with coriander and chopped onions. Top it with Sev and serve it with a pav.

T - Easy Methi Thepla Recipe

A good snack during Quarantine. Kids get to consume fenugreek that is so healthy. This is the perfect way you can incorporate some greens in their diet. Theplas go well with almost everything. It can be an accompaniment to meals or just savoured for teatime. Made so quick, it can be eaten with  just any sweet, spicy or tangy achars/pickles and masala kadak chai. 




 Ingredients



1 cup Whole Wheat Flour
1 cup chopped Fenugreek / Methi Leaves

1 tsp Turmeric / Haldi Powder


½ tsp Red chilly powder

Salt to taste

1 cup cooking oil








Method



1. Wash the methi in running water and strain it completely. Now finely chop the methi and keep it ready for mixing in the dough. 
2.In a large bowl, take the whole wheat flour, add chopped methi leaves, turmeric, red chilly powder, salt, and half cup cooking oil. 
3.Slowly mix the flour by adding very little oil and knead into a tight dough. Keep it covered with a wet muslin cloth for 10 minutes.
4.Now make a small ball from the dough and sprinkle some dry flour on it.
5.Now with a rolling pin begin to roll the thepla and dry to make them as thin as possible.
6.Transfer on a hot tawa,  flip the thepla when one side is partly cooked. To this side, apply a little oil , now flip again and apply oil on this side as well.
7.Now get ready to savour the theplas as they are ready.
8. Serve it hot with curd and pickle. 


Note


Theplas can be stored for a few days. It is the best snack for traveling.
Even though its almost May and time t travel to your native village with a whole bunch of homemade fresh theplas, it ok.  Enjoy hot theplas with pure ingredients crafted with love especially for you and your family.

You can add crushed garlic to the theplas.
For the plain thepla s( more like Masala Roti) just add red chilly powder, turmeric powder, salt, and oil to the dough while kneading.
