However much I love Alphonso  mangoes, my first mangoes of 2021 was of a different kind. During my regular visit for fruits and groceries to Bazar road, my fruit vendor strongly recommended this sweet freshly variety of mangoes from Kerala. It was at that time, I decided to stir up a simple dessert for the festival of Holi.

So instead of the regular gujiya, malpractice, thandai, and jalebis this was my humble tribute to the sweet tooth without adding sugar. 


So here is my recipe of Holi  Mango Yogurt Thandai Shots

Ingredients 

2 big mangoes 

1 cup hung curd

Handful of nuts (cashew, pistachios and almonds)

1 tbsp thandai powder

1 tbsp raisins (kismish)

2 digestive biscuits( powdered)

Pomegranate pearls (for garnish)

1 tbsp honey (optional, only of mangoes are not sweet)



Method 


1. Wash, peal and make a pulp out of the mangoes 


2. Now add the hung curd and mix it well. 


3. Powder the digestive biscuits, add the thandai powder, and half of the chopped dry fruits and raisins to this.


4. Take cutting chai glasses to make the dessert.  First put in a layer of mango Yogurt.


5. Now add a thin layer of powdered biscuits and nuts.


6. Add another layer of mango Yogurt. 


7. Garnish this with pomegranate, chopped mango bits and nuts. 


8. Place this in the chiller for minimum an hour before serving. 


Note 


You can mix cream to mango instead of yogurt to make mango mousse jars 


Add a cake layer instead of biscuits for another variation.

Easy Silky Eggless Mango Pudding

 

For Silky Mango Pudding

Stirred up a simple silky mango pudding before the mango season gets over. Only a few varieties of mangoes are available in the month of August.  And I had to make do with the green variety called Chausa  is Hindi. It's a dark green color skinned mango but very sweet and pulpy.

This was a  really smooth and soft mango pudding and is vegetarian with no eggs used. I used gelatin as a setting agent in the pudding. The original recipe uses gelatin. You can use agar  agar as an option too.

Note the ingredients for the silky Mango Pudding.

Ingredients 


2 cups mango puree
Half cup milk
2 tbsp sugar
Half cup fresh cream
1 sachet gelatin crystals

For Garnish
Few mango pieces
Cashew
Mint leaves 

 

Method

1. First wash the mangoes,  peel the two mangoes. Roughly chop them into pieces. Then add it to a mixer or blender jar. And blend to a fine pulp.

2. Dissolve one teaspoon of gelatin (or one sachet) to half a cup of milk. Make sure the milk is not cold.

3. Now take a pan and add the mango puree. Set the temperature on a low flame and keep stirring.

4. Then add 2 tablespoons sugar. Sugar can be added less or more depending on the sweetness of mangoes. Since the mangoes I used were very sweet, I added only 2 tablespoons of refined sugar.

5. Also add the cream and stir till it's all mixed well together

6. Add the milk and gelatin mixture and stir for 5 minutes till the mango puree thickens ( white sauce consistency)

7. Turn off the fire and let it sit for 5 minutes 

8. Grease the pudding bowls with some cooking oil.  Pour it into the dessert bowls and place it in the refrigerator to set for 4 - 5 hours.

9. When the pudding is set you can unmold it onto a dish. Garnish it with mango cubes, few cashew nuts and mint leaves.

10. Now it's time to enjoy your chilled silky mango pudding. 

 

 

Note

You can use agar agar as a thickening agent instead of gelatin.

Or try it with another fruit if you wish.

Smoothies - Two easy Low cal desserts with banana

The craving to indulge into something sweet has made me try out two desserts. They both are low cal, healthy and fruity.



Smoothies are very refreshing this weather. First I tried a Mango Banana Smoothie made with fresh mango, banana, honey and milk. You can use yogurt instead of milk.
You can add more milk, but I like it like a thick shake and very fruity.
The second dessert is a protein chia seed shot made with chia seeds, dates, milk, almond powder and banana.







Banana Mango Smoothie 
Ingredients
I cup Mango Puree
1 Banana
I cup milk/ plain yogurt
Sugar/honey optional

 Method
1. Take two mangoes, wash peel and remove the pulp. You can blend it in a mixer or do it with your hands.
2. Chop up the banana, now combine the milk, mango pulp and banana.
3. Put this all in a mixer and blend well. 4. Pour this in glass and top it with pumpkin seeds and some pistachio powder.
5. Keep it in the chiller for some time before serving.

6.You can use yogurt instead of milk.
7. If mangoes are not sweet sugar can be added but I avoid it. Enjoy the natural sweetness and goodness of the fruits.




Chia Banana Date Pudding

Ingredients

¼ tsp vanilla extract
¼ tsp cinnamon powder
1 cup whole milk
½ cup finely chopped dates
2 tbsp Almond powder
2 tbsp chia seeds
 

Method

1. Soak two big tbsp of chia seeds in half cup water. For best results leave this overnight.
2. Take milk and mix the almond powder in it.
3. Add chopped dates, cinnamon powder and dates.
4.Blend this in a mixer for 1 minute only.
4. Now stir in the chia seeds. Pour this in small dessert glasses.
5. Top it with sliced bananas and cinnamon powder. 


Enjoy this chilled and see how your stomach will say a big thank-you to you.
